I’m trying to make my own bread (I’m gluten/lactose/sugar intolerent -_-).
This is a “pain cocotte”, using just the oven, no bread maker involved.

Here’s a new try, following the recipe of a MOF (Meilleur ouvrier de France) : here (fr).
Main changes are : adding cornstarch (actually, more cornstarch than rice floor), and different cooking technique (rising in 2 steps, same for cooking).
A tad bit more work, but worth the result.
